This might be a little weird to my non Filipino friends. However, it doesn’t mean you shouldn’t try it because it is pretty good! One that Uncle Roger will most definitely approve!
Filipinos love spam and Filipinos love fried rice. So for my first recipe, I’m gonna be a little tiny bit creative and mix them. I’m not good with introductions so let’s just get straight to it!

Ingredients:
1 can Spam
4-6 cups cooked white Jasmin rice
5 cloves of garlic minced
1 piece onion chopped
1/2 cup chopped green onion (for garnish)
1 small can kernel sweet corn
1/2 cup peas
1/2 cup small cubed carrots
2 piece scrambled eggs
Teriyaki sauce
4 tablespoon cooking oil
Margarine or Butter
Salt and pepper to taste
1 teaspoon MSG (only because we’re a fan of Uncle Roger)
Instructions:
Chop the Spam into small cubes
Beat 2 eggs in a bowl
Heat cooking oil in a wok in medium heat. Put in butter and let it melt.
Put garlic in and cook till golden brown.
Sautée the onion till tender.
Add peas, carrots and spam. Let cook for 3 mins constantly stirring and mixing well.
Push everything to the side of the wok and add pour in scrambled egg. Keep stirring until egg is cooked and fluffy.
Drain the juice out of the corn can then add the corn in the wok. Cook for about 2 mins more
Add the rice and mix well.
Add MSG and Teriyaki and mix well.
Salt and pepper to taste.
Transfer to a service plate and add green onion on top.
Serve with your favorite breakfast meet.
